What's the difference between sflow and netflow? Is one better than the other?

I have a custom script that outputs a time stamp and some system metrics every 15 minutes. How would I send the output of that script to Log Server?

We’re using the trial version of Nagios XI along with some other monitoring solutions. I’m currently running it as a VM on ESXI 6.5. In terms of best practices, is it better to run XI as a VM or on it’s own dedicated physical server?
