Store the Log Data in Three Different Directories

Hello,
I need assistance in achieving the following. I have three groups of servers as below:

i. Group A-customer relationship management (80 servers)

ii. Group B-Mobile Money Servers(60 servers)

iii. Group C-IT Servers(100 servers)

I would like to create three different directories underlined above. I need to store the log data from the different devices in their corresponding directory as listed above.
Q1. How can this be achieved. i.e direct the logs to the different respective directories.

Q2. If this is achieved, will it affect how I view the logs from the dashboard, or will I still be able to create my dashboards as before with no omissions.
