I have Nagios core running on a Linux server and have several AIX clients. I would like to remove Nagios from my server and all clients. What are the steps to take to uninstall?

You should be able to use the XI uninstaller script to remove core as well since it is the backbone:

Let us know if you run into issues, additionally you could modify the script to only include core portions.

An alternative method could be found in many of the pages in this search:

Did you install Nagios Core from a package? i.e. "nagios3 from the Ubuntu installation guide"
