I once worked at a company that showed all the red problems at the top and then yellow and green, is there a way to do this?

What you're describing sounds like simple filtering/sorting in status.cgi. You can click the little arrows next to a column header to sort by that column (highlighted in red):

That said, Nagios Core is open source. There's really nothing stopping anyone from manipulating the code in whatever way.

Yes but theirs was full screen wide, so you could see it from across the room

They may have pulled the data from the the /nagios/jsonquery.html page and made their own UI
