Welcome to the forums!
With the default installation of Nagios Core, there is a contacts.cfg file in /usr/local/nagios/etc/objects/. You could alter the contact information there in your UAT environment, and then just not migrate contacts.cfg to Production. Then your UAT environment could be configured with email contacts representing the different groups in your organization. Would something like that work?
