You can remove/disable ESX hosts/services in the usual way. Removing the Vmware SDK is probably not something you want to get into since it installs perl modules via CPAN or locally, etc.

Actually, I remembered that there's an uninstall script. Here's what the documentation says about removing the SDK.

Run the uninstall script, for example, if you installed vCLI in the default location, run the following
command.
/usr/bin/vmware-uninstall-vSphere-CLI.pl
Delete existing versions of vSphere-CLI.xxxx.tar.gz and delete the vmware-vsphere-cli-distrib
directory.
