Greetings,
Is there a way I can graph perfdata in Nagios XI for proc usage and other types of checks for longer windows? Rather than 24 hours, say 7 days?

There should be an option above the performance graph to change it to a 7day window. See the screenshot below -

In XI I don't seem to have this option, unless it's simply how I'm accessing it. Shown in the attachment.

Which page are you trying to adjust it on?
Try navigating to Home -> Service Detail -> Click on the service in question -> Click the performance graphs tab (next to the current one selected, overview)
Do you see the option on that page?
