When I did a query that went back 30 days it came back with 1541 hits. However it said that only 250 were available for paging. How to I see the rest of the data?

On the pane that reads 'All Events', and just above your '0 to 50 of 250...' part, look to the right for a cog that represents 'Table Settings'. From here, navigate to 'Paging' and you'll be able to modify the number here.
I do advise against setting this to a very high number, as you will constantly be querying for more data than you possibly need. If it's a specific machine / log - it may be worth creating a dashboard specifically for this use case.
