looks like somehow python, http and etc on the prod nagios server got uninstalled
We are currently unable to reach the gui.
Is there an easy way to find the logs / errors within nagios to see what is missing?
For example, I want to back up the httpd config for nagiosxi/nagios but an unable to find it.

If you run the Nagios XI upgrade script, it should install any missing packages that are required for Nagios XI to function properly.
Nagios Core, the heart of Nagios XI has logs located in /usr/local/nagios/var and Nagios XI has logs located in /usr/local/nagiosxi/var
As for the locations of the Apache configs for Nagios/Nagios XI, I believe Nagios updates Apache's the httpd.conf which on CentOS/RHEL/Oracle by default will be located at /etc/httpd/conf/httpd.conf.
Nagios XI also has a number of Apache configuration files (nagios.conf, nagiosxi.conf, nagiosql.conf) located in /etc/httpd/conf.d/
