Are you having issue only with highcharts? Can you see the image if you switch to the "old style" graphs?

Admin->Manage System Config->clear the "Use Highcharts for Perfdata Graphs" checkbox, and click on "Update Settings"

Yes it appears to be an issue with highcharts. After unchecking that option the graphs appeared again. How do I fix the highcharts option as I would prefer to have them instead of the old ones

Try installing the new, patched version of the Graph Explorer. This should fix your issue. You can follow the steps, outlined in this post:

Ok I have installed the updated version of graphexplorer and the Highcharts are now working again. But in the /var/log/httpd/error_log I'm getting a lot of php Notices:

Well, they are not errors, just warnings. I will open an internal bug fix nonetheless.
