IF you have additional unallocated space available to the VM guest, then you should be able to resize the partition via resize2fs.

It may be easier to start over and either increase VM host virtual disk size or you may be able to add a second disk now for /var/log mount point.

OK I think I will just rebuild it with a larger HDD to start since the server isn't live & in production technically as of yet. Thnx!
