I can't find any code in core that would strip utf-8 characters. I even changed the check_ping plugin to send a "ó" character, and it showed up fine.

Are you running Mod-Gearman or something else that might process that data before it gets into core?

That might be the problem right there. That frontend was not developed by us, so we're unable to completely provide support. Exchange is all community contributed projects, and we're unable to support every single one of them. You could attempt to contact the author, or if there's a way, try it from the normal Nagios interface. Another solution would be to use a wrapper script, and change the text to a format that will work.

I would like to make sure this gets working for you. Is trying it in the normal Nagios Core interface something you're going to be able to do?

I think that the problem is not with the Vautour theme, it's only a theme, not a web interface...

A theme can still have this affect, as @hsmith mentioned, can you try using the normal theme and see if this is still an issue?

Do you have any computers or devices with utf-8 characters in the name? Do they show up correctly?
