Theoretically you could, but it is not advisable due to the amount of queries that would be hitting that mysql instance.

I guess this brings me to my next question....If I'm overbuilding my environment with multiple XI servers why not just leave MySQL on the individual XI servers? Wouldn't hurt as long as the performance isn't suffering.

While possibly true, you may still want to watch the mysqld load/io to verify.
