Anyone found a good way to have Nagios receive and process SMTP messages?

Are you wanting to process these emails as a service check?

I would check Nagios exchange to see if someone has a script or plugin that already does this.

I'm not 100% sure what you mean by that, but we have a wizard that will set up sending an e-mail and then checking whether it was delivered as expected, which may do what you want. You can download it from http://assets.nagios.com/downloads/nagi ... livery.zip.
