For some services I dont have performance graphs available (I see: "There are no datasources to display for this service "in the webinterface).

Is there a possibility to remove the graphs that are empty / that dont have a datasource?

I don't believe there is currently, but that's a feature I've been wanting as well. I'll bring it up as a possible enhancement.
