This is always a tough one to answer, because the performance load on a server can have HUGE variation depending on how it's set up and what you're monitoring. We generally recommend capping a single server at around 10000 services, but again, depending on what checks you're running, and if they're active or passive, that number can change a substantial amount. Monitoring bandwidth for switches, for example, takes a lot more CPU than a simple ping check. I also know some people running Nagios core with over 15000 services running, but I don't know what they had for hardware. Here's a doc to tuning a Core server.
