moving mysqldb to non-default location

For our new environment, I have off loaded MySQL to a remote server, using
your informative document as a guide.
Now we would like to move the mysql db to our SAN on that same remote server as
we have been told by our storage guys that having the db actually live on the SAN would
eliminate I/O bottlenecks and provide more resiliency.
How do I do this?
