I need to assign a static IP address (netmask, gateway, DNS1 and DNS2 also of course) to the base image of Nagios XI / CentOS.
Can someone please walk me thru the process?

Are you using our VMWare image?
If not, it's somewhat outside the scope of Nagios XI support, I'd be glad to offer you a little direction

Yes- I am using your image, although with Hyper-V. It seems to be loading up and running fine in the Hyper-V environment.

The documentation I provided can be used to setup the the virtual machine, however you will need to make sure that the Hyper-V environment knows how to route to your VM.
Additionally, you can configure the CentOS network with the following command
The interface can be navigated with the tab / enter keys using the spacebar to uncheck items.
