Is it possible to find out who entered a system into Nagios XI?
if so, how?

You should be able to find this information in the audit log (Admin > System Information > Audit Log).

only seems to work if I have the Enterprise licence.
I only get the last 5 items otherwise

Yes, this is correct. Audit logging is part of Nagios XI Enterprise Edition. See the comparison of the features here:
