SMTP vs Sendmail

Linux OS: CentOS release 6.2 (Final)
Linux 64 Bit
Nagios version 5.5.11
We have email notifications working fine from email server at IP x.x.x.3. This is an external exchange server.
Emails are set up in Nagios XI as sendmail.
We now have a new email server at x.x.x.6. This is also an updated exchange server.
Issues: Emails are going to old x.x.x.3 server.
We have tried the SMTP in Nagios XI and set the new server ip. We do a test email and that comes from the new server x.x.x.6. However, notifications are still using the x.x.x.3 server.
We have tried using sendmail and the test email and the notifications are both are going to the x.x.x3 email server.
Questions:
1. Why is the SMTP notifications using the old server when the Test email uses the new sever?
2. Where else should we be looking for an email setting that is referencing our old server IP?
