Can Nagios 5.7.2 be installed on a CentOS FULL install or do you HAVE to have a CentOS MINIMAL install?

The tarballs in the offline install repo should provide all the prerequisites for running Nagios XI. Having more software available on the system shouldn't negatively affect the installation.

Are you receiving any errors when you attempt to install and run it?

Yeah, it was still tryng to go out to mirror sites for files.

What errors are you receiving? Please post an error log so we can diagnose any issues you're having.
