I watched the video and on the email portion states that a legitimate email from your domain must be used. We have a hosted email exchange, so do I need to create a user on that system and use the newly created "user" as the administrator email for Nagios?

Yes to rout email notifications through your exchange you will need to create an address which is allowed through and then use that address to send mail from the Nagios system to your users/contacts.
