I'm still configuring my XI server after the import from core. So there are a lot of machines that didn't come over correctly. Other than turning off the monitoring engine, where do I configure XI so it doesn't make so many logs, because it's filling up my /var. For now I don't need 5 days worth of logs or every info message logged, those are creating more of a problem than anything.

When you say /var I'm assuming /usr/local/nagios/var ?
You can edit the /usr/local/nagios/etc/nagios.cfg and change some of the logging options such as:
log_event_handlers
log_external_commands
log_host_retries
log_initial_states
log_notifications
log_passive_checks
log_service_retries
