We are looking to replace out current Nagios XI server with a new one. Is it possible to migrate everything from our current instance to a new server and not loose any historical performance data ?

The standard process will grab your perfdata, it is located in the perfdata subdirectory of /usr/local/nagios:

I'd do a test to make sure the results are as you expect prior to actually making the full cutover, but I think you'll find the standard backup/restore process to work well for you.
