I cant find a way to view the notes I put in for a service. for example:

Where is the notes value visible? I can not see it anywhere. Ideally when the service is selected it should show it, or when I hover over the icon of the service. or next to the hoverable icon that shows the graph.

In XI the Object Notes component is the the best way to go about this, it adds new tabs on host and service detail screens to allow admins and end users to add custom notes.
Download it here:

Then upload it to XI: Admin > Manage Components > Upload a Component. Afterwards look for 'Object Notes' on the same page to ensure it uploaded correctly and that the version is up to date.
Now, on any host or service status detail page you'll see a new tab for notes.
