That would depend on the GUI being leveraged. There are many out in the wild. By default, there isn't a way to set thresholds via the Nagios Core GUI and you would do that within the configuration files for a given check.

For Nagios Core this is all done within text files, there is no UI option - that's one reason why Nagios XI came about.
