I wanted to backup log server configuration, in case the server crashes and I need to install a new one. Is there any documentation about this?

Configuration snapshots are probably your best bet:
They work similar to config snapshots for Nagios XI if you're familiar with those. You should be able to grab any of those (by clicking the little "Download" button under Actions) and store it somewhere. If your configuration gets lost or messed up, just drop the tar.gz into that /usr/local/nagioslogserver/snapshots path and you should be able to restore from it.
