Can Nagios Xi ova be used in a production environment? What's the difference between ova template and a new manual installation? Is every nagiosxi version of the ova template new install or incremental upate?

Some customers do exactly what you're asking about. Many do a from-scratch install instead. Either way works!
Do be aware that if you use the .ova image, you should consider increasing the VM's memory, CPU, and storage to accommodate your environment. If you're a fairly small shop with dozens of hosts and hundreds of checks, you should be fine out of the box. However, if you're larger than that and start to run into performance or space issues, that would be the first thing to look at.
The .ova images are from fresh installs, but they are upgradeable by you just as a from-scratch install would be.
