what would be the best upgrade process from xi-5.7.2 to xi-5.8.1? Can I do this in one step on my testing server first?

You should be able to follow the XI Upgrade Instructions document on your test server to test the upgrade process.
Make sure you back up or snapshot your system before starting.

I will do it tomorrow ... to restore the main DB from prod server after the upgrade..... I need just to stop nagios and run the restore script on the backup server, am I right?

Correct, just make sure to follow the After the Restore section of the guide completely once you are doing restoring.
The process is this:
- Spin up new server running the latest supported distro
- Install the exact same version of XI that the old server has on the new server

- If you have a RAMDisk setup, RRDCacheD installed, or Mod_Gearman setup on the old system, set them up before restoring:

- Backup the old/transfer to new/restore to the new
- Follow the After The Restore section from the backup/restore guide completely
