I am monitoring many services on a switch (ping, port bandwidth, ...) and would like to receive an email notification only when the ping service goes down. I don't want to get notification emails from the other services on that switch.
Do I have to enable notifications on the host (send notification immediately) and use CCM Service management to select Notification options: Critical & Notification enabled: On on the ping service only?
Set all the other services with Notification enabled: off?

Yes that is correct. To save time, when you first create the host don't enable notifications.
Then you can go back via the CCM and turn on the notifications for the ping service.
