We are currently running Nagios Core and really like the product. Now we thought about buying Nagios XI and saw that there is a 60-Day-Test. If we install Nagios XI over Nagios Core, will all the Core Settings still be there? And if we later decide to not buy Nagios XI and uninstall it, does Nagios Core still have the Settings?

You will want to install XI on a clean system, for this reason we have created documentation on importing configurations from core systems. You could download one of our XI vm's and import your core configuration to test it out. Here is the guide:

SO if I understand I have to uninstall Nagios Core before I install Nagios XI, is that correct?

Correct, you will need to either remove it from the current system, or spin up a new VM while you transfer configurations and then remove the old VM. Unless of course you are on a physical server. Nagios XI uses a different database structure than if it were just core without being paired with XI, and a few other bits which could conflict upon trying to install Nagios XI over a existing core install.
