Hello, hopefully this is a simple problem.
I disable notifications for a host, but I'm still getting service notifications for that host. What am I missing? Do I really have to manually disable notifications for every service?

Yes and no... yes you do need to disable both, however you do not need to do it manually. Under the advanced tab of a host, there should be disable notifications for this host and all services. Please let us know if this works for you as expected.

The only option I see is to schedule down time for the host and services. Is that it?

Nope. On the advanced tab you should see a link named "see this host in nagios core". Click that link and then you should see an option to disable all service notifications.
