Actually, they're already there... :-)

ENABLE_SERVICE_FRESHNESS_CHECKS
DISABLE_SERVICE_FRESHNESS_CHECKS
ENABLE_HOST_FRESHNESS_CHECKS
DISABLE_HOST_FRESHNESS_CHECKS

These commands apply globally, so they should be what you're looking
for.
