Our first NagiosXI installation was done prior to the availability of the 64-bit CentOS VM image. We are seeing considerably better performance from the second (64 bit) Nagios XI installation and would thus like to migrate the first one to 64-bit.
I would like to validate that the backup/restore procedure is correct for this migration? Are they any caveats or gotchas with this?

Doc is updated, but it may take a few minutes for the new version to hit the library.

will my license for the 32 bit system transfer directly to the 64? or will I need a new one?

The license will still work regardless of the bittiness.
