I've had to create admin accounts for our different Regional IT Managers so they can manage their devices. If one of them logs in with their admin account and jacks things up, is there anything in Nagios that will tell me that?

Sort of. If you go to Admin -> Audit Log, it will show the major events of who logged in, modified the configs, etc. But you would need to search for what you consider to be "jacked up" manually. This is an Enterprise feature though, so you will either need to enable the trial or purchase a license if you want to use it long-term.

We have an Enterprise license and the audit log is what I was looking for. Thanks.
My definition of "Jacked Up" is anything done by a third party that causes extra work for me.
