I use the Object Notes component that adds a Notes tab to service checks (http://exchange.nagios.org/directory/Ad ... nt/details), and I'm wondering if there's a log or anything for this component that would show which user submitted changes to the Notes field and when?

Not at this time. Probably it wouldn't be very difficult to add this functionality to the component. Feel free to post a feature request on our public bug tracker or I can post it for you if you want me to.
