I just want to confirm that my understanding is correct and that I am following a "smart" principle.
I am organizing my hosts under specific host groups. I have build a set of specific host templates that then I have assigned to those host groups. If a specific host needs something special that I just use local setting to over ride sine they take precedence.
This seems like the easiest way to manage 200+ hosts.
Also, is there a recommended usage guide out there? I have seen many guides on how to do something.. Would love to see industry recommendations on how to do this.

You are correct that a local setting will override anything in a template. As for "best practice" I can't speak for the IT industry as a whole, but I know that I've always used templates and haven't really looked back.
