Are there specials configurations on your system, ie; is Gnome installed? Are you using a proxy? Are you using SSL?

No.

ISSUE:

When we go to the nagiosxi URL, we get the following: (please see attached)

It comes up with the installer.php instead.

This should only come up the first time you go there and completes the installation and allows you to set the admin password and email.

After you set the fields to the values you like, and click install on the bottom, future visits to http://<IP_ADDRESS>/nagiosxi should take you to the login prompt.
