Does Nagios Xi supports the monitoring of the Windows Server 2016/2019 Server Core?

As long as there is some way to connect to the server, and pull down the status of something that you want to monitor, we can monitor it. Are you able to install the NCPA agent to your servers? That would probably still be the best way to monitor the server, regardless of whether the full GUI is installed or not.

do we support installation of ncpa agent on the non-GUI windows server?

To my knowledge we don't do indepth testing with Windows Server Core. But I did just fire up a Windows Server 2016 Core VM, and was able to install NCPA and start running checks against the server. There isn't a silent option for the installer, so it does have to be installed at the console of your VM or physical server. But once you execute ncpa-2.2.0.exe in the cmd or Powershell window, it has no problems displaying the window for the installation.
