anytime we attempt an update from the GUI it is stuck in progress forever. manual update through console works fine using these commands.

Execute the following commands in your terminal session:

wget -O upgrade.sh https://assets.nagios.com/downloads/nagiosxi/upgrade.sh

sh ./upgrade.sh

but why does the GUI update never work? even after manual update, the GUI still says update in progress...

And in regards to your question, this is a known issue on certain systems. For the time being, I would recommend using the manual upgrade instead.
